  • 2 cups fresh baby spinach
  • 1 cup cooked quinoa
  • 1/2 avocado, sliced
  • 1/4 cup chickpeas
  • 1 tbsp extra virgin olive oil
  • Lemon juice to taste
  • Sea salt & cracked black pepper

Instructions

Wash and dry the baby spinach thoroughly.

In a large bowl, combine the cooked quinoa and chickpeas.

Whisk together the olive oil and lemon juice for a quick dressing.

Toss the greens and quinoa together with the dressing.
